Turn stale bread into crispy fried croutons for salads, soups and snacks. Once made, they can be stored in an airtight jar or container for up to 3 days.

Ingredients

  • Stale bread
  • Garlic
  • Sea salt
  • Oil

Method

Step 1 

Preheat the oven to 180°C (350°F/Gas mark 4).

Step 2

Heat in a frying pan over 3 minced garlic cloves and cook, stirring, for a few seconds making sure the garlic doesn’t burn.

Step 3

Throw in 1–2 cups (50–100 g) bread chunks and a good sprinkling of sea salt, then stir well to coat the bread in the garlicky salty oil.

Step 4

Once the bread is starting to crisp, transfer to a baking tray and bake for 3–5 minutes, until crisp but not hard. Allow to cool completely before storing.
